Layered White Chocolate Raspberry Cake
by Nadia
(Kalbar, QLD)
My Practise Cake! I created this White Chocolate Raspberry Cake as I needed some cake decorating practise, and after a friend gave me a packet of white choc melts that she wasn't going to use (how could you not find a use for white choc!!!). I made up this cake.
To avoid having to cut even layers out of a bar cake, I actually baked it in a biscuit tray! worked amazingly well, only took 16min of baking time and I had enough left overs to make some smaller cakes for a friends son's birthday.
The layers are made up of a raspberry jam concoction (yes, made it myself) and the icing was white buttercream with a little of the white choc mixed in. I used a little of the raspberry jam mixed with buttercream for the detail on the top.
The cake itself tasted amazing, but I am a big white chocolate fan!
I really enjoyed doing this cake, although it was for no special occasion, it turned out really well.
