Try this Banana Cake Recipe

Here is my tried and trusted Banana Cake Recipe. Bananas are a great food to have each day. Eat on their own, add frozen bananas to a smoothie or add to your pancake mixture.

Bananas are high in potassium, low in sodium, a great source of Vitamin A, C, iron, calcium, phosphorous, magnesium, fiber and many other vitamins and minerals.

When your bananas start going brown or you see some on sale at the shop – put them in the freezer so you’ll always have some when you feel like making a cake. You can put them straight into your freezer in their skins no preparation required.

Banana cake is my favorite (Well… after Black Forrest Cake that is :)

Use this recipe to make a cake for morning tea, muffins or cupcakes. Most kids love banana cake so use it as a healthier alternative for a kids or adults Birthday cake.

Use over ripe bananas where possible.


BANANA CAKE RECIPE

3/4 Cup Sugar
125g (4.4 oz) butter
2 eggs
1 teaspoon bicarb soda
2 1/3 cup Self Raising Flour
2/3 cup milk
2 – 3 mashed over ripe bananas
Add a bit of Cinnamon or mixed spice too

METHOD

Cream the butter and sugar
Beat in eggs
Fold in bananas
Add Sifted flour
Add bicarb soda dissolved in warm milk

Cook in a moderate oven - 180oC (350oF) for 30 – 35 mins


Serving suggestion: Cut the cake in layers and put whipped cream and sliced bananas in each layer and on top. Sprinkle with some cinnamon sugar.

Other ideas to decorate your cake: Icing, Cream cheese frosting, Caramel also tastes nice with banana cake.

I love this recipe as it doesn’t require a food processor – I just use a fork and a wooden spoon.

I also use less sugar and you can try wholemeal flour to make it even healthier. Don't skimp on the bananas.

You can freeze your cake or make mini muffins and freeze for the kids or adults lunch box.
